The Tweed Fair Game for Foodies

The Tweed is the jewel of the New South Wales far north coast – emerald like the rainforest flanking its mountains to the west, sapphire like the Pacific Ocean to the east, and ruby red like the rich, volcanic soil which has long-fuelled the region’s farming and cane industries.

Though perhaps better known in the past for its hiking trails, sugar cane and sleepy villages, the region is now coming into its own as a gourmet powerhouse too thanks to the success of highly-acclaimed local restaurants including Paper Daisy, Taverna, and Mavis’ Kitchen.

The latter, a relaxed restaurant and eco-friendly B&B set on a 25-acre former dairy farm in the shadow of cloud-catching Wollumbin-Mount Warning, will be hosting a special one-off dining event on the 25th August. And we’re seriously excited!!

Held by Destination Tweed 2050 Collective, the event – Fair Game Wild Venison – is designed to capture the essence of the region and will feature venison caught and harvested from the wild, prepared by award-winning guest chef Dariush Lolaiy from Cazador (Auckland NZ).

Chef Lolaiy will showcase cultural traditions and innovative cooking techniques, including the preparation of meals over an open fire, perfectly paired with foraged greens from the Mavis’ Kitchen garden and drinks from local Husk Distillery, makers of Ink Gin.

“The Tweed is now emerging as a hub for extraordinary bespoke food experiences,” says Kylie Ryan-Milroy, Chair of Destination Tweed 2050 Collective, a group of local businesses and individuals who are working to showcase the diversity of the Tweed region.

“Our high-quality produce is born from our pristine environment and artisan producers working alongside our community of creative chefs to serve up memorable and authentic culinary adventures. This event is one such celebration.”

Chef Lolaiy’s wilderness-to-fire approach to cooking celebrates time, place, purpose and environmental impact, with dishes guided by the seasons and bounty of the bush. Often served outdoors, these dining experiences create the perfect environment for diners to slow right down and savour the moment (not to mention some truly sensational cuisine).

“Wild venison is often thought of as a strongly flavoured slow cooking meat,” Chef Lolaiy says. “I can’t wait to show our guests the surprising delicate flavour of this lean, healthy, ethically-sourced protein.”
